Picture a simmering Dutch oven of fork tender meat bathing in an intensely flavorful sauce, with a cornucopia of carrots, potatoes, onions, and herbs. Is there a more perfect winter meal than a braise? Braising is one of our favorite cooking methods, a transformative process in which tough, humble cuts are elevated into luxurious, comforting meals. This hands-on workshop will give you new butchery skills, and give you a road map for braising with confidence.
In this class, you'll learn to trim, clean, and butcher some of the best beef braising cuts, such as beef neck, short ribs, shank, and beef cheeks, depending on availability. We’ll discuss how to harness this simple and convenient cooking technique, and set you up with the meat and our rich beef stock to create the perfect braise.
We'll also discuss the complexities of sourcing well-raised meat in today's food system. You'll get to know our farm partners in upstate NY, where our cows have year-round access to pasture, and are antibiotic and hormone-free. You'll learn what it means to have grass-fed beef, and how it impacts the flavor and nutrition. You can see the difference between conventional beef and our beef, which is distinguished by bright red, well-marbled meat. Best of all, you'll take home some of your work, so you can continue practicing your skills!
This is a hands-on workshop with a heavy butchery component, suitable for students who have intermediate culinary skills. You'll have the opportunity to take home beef to cook on your own.
