Crown roasts are formed by taking bone-in pork loin and linking the ends in a circle, with the bones pointed upwards. A crown roast is 12 ribs minimum, and comes frenched (the tips of the rib bones are exposed), tied (to promote even cooking and an aesthetically pleasing shape), and skin off.
Each rib is 1-1.5 lbs. We recommend 1 rib per person.
