Yakitori is the Japanese art of skewered chicken cooked over charcoal. While most people are familiar with cutting meat for kebabs, yakitori is the precise butchery of the muscles to create savory bites that cook evenly and have a variety of flavors and textures.
During the class, we'll explore how to skewer the muscles that we've delicately harvested, apply a variety of seasonings and sauces, and look at the utilization of the skin, offal, and cartilage. Even better, we'll send you home with all of the skewers you create for your enjoyment!
